Equipment

  • Small Stainless Steel Pot
  • Measuring cups
  • measuring spoons
  • Fine Stainless Steel Mesh Strainer

Ingredients
  

Quinoa

  • 1/2 cup quinoa uncooked
  • 1 cup filtered water or coconut water
  • Sea salt to taste optional

Topping

  • 1/2 cup Blueberries
  • 2 Tbsp Pumpkin seeds
  • 2 Tbsp Sliced almonds
  • 1/2 cup Unsweetened Almond Milk unsweetened

Instructions
 

  • Rinse quinoa well under cold running water in a fine mesh strainer to remove the natural bitter soapy coating called saponin. Generally, once the soapy tiny bubbles are gone, you're good to go.
  • Placed well-rinsed quinoa with water and salt in a saucepan, cover and bring to a boil. Turn the heat to low, keep covered, and simmer for 15 minutes.
  • Divide quinoa between two bowls. Top each bowl with half of the blueberries, pumpkin seeds and almonds. Serve with almond milk.

Notes

Don't have a fine mesh strainer?
No problem. You can use a coffee filter, or even better, a small coffee filter basket. 
Living clean and water saving tip!
Put a plug in a clean sink before rinsing the quinoa.  Once finished rinsing, feed the  water to the plants.
They will love it!!
