Fresh Mango Salsa
So simple and will add a nice fresh burst of flavour to any fish or poultry. Or enjoy as a nice healthy snack with a dallop or two of gut friendly protein rich greek yogurt. Makes 1 cup.
Equipment

- Measuring cups
- measuring spoons
- Chef knife
- Peeling knife
- Small glass mixing bowl
Ingredients
- 1 Mango fresh, diced
- 1/2 cup Blueberries fresh, optional
- 1 Lime freshly squeezed with pulp
- 2 tbsp Fresh cilantro freshly chopped
- 1/4 cup Red onion finely chopped
Instructions
- Mix and serve over any type of fish for a fresh taste.
Notes
Any combination of fruit such as kiwi, mango, papaya, peaches, strawberries, etc. chopped up is nice.
If you wish, you can swap out red onion for green, cilantro for basil or parsley.
Like more zip? Add a 1/2 jalapeno pepper, seeds removed and diced.
