Oven-Grilled Chicken Fajitas
These super easy Fajitas can be grilled in your oven or on your grill. Or if rushed for time, quickly stir-fry the ingredients together in one pan and serve with warm soft corn tortillas. Just add your favourite toppings!

1/4 cup Red Pepper Sweet, Raw, sliced 1/2 cup White Onion Raw, sliced 1/2 cup Mushroom Raw, sliced 2 Chicken breasts Boneless, Raw, cut into strips 4 Tortilla Soft corn 1 1/2 tsp Chili powder 1/3 tsp Cumin 1/4 tsp Herbamare herbed seasonal salt 1 tbsp Avocado oil 1 Lime 2 tbsp Fresh cilantro chopped
Preheat Grill or Oven to 425 degrees.
Gather, wash, dry and prep all ingredients.
Toss all ingredients except the lime in a large bowl and mix well.
Zest lime directly over the bowl. Slice lime in half and then freshly squeeze half over the ingredients. .Save the other half for later.
Line 9 x13 baking sheet with parchment paper that's suitable for high temp cooking.
Spread out all the ingredients on the baking sheet well to prevent them from steaming.
Pop baking sheet in the oven and grill for 10 minutes.
Remove the baking sheet, flip and put back in the oven to grill for another 10-15 minutes,
Warm 4 soft corn tortillas by wrapping them in aluminum foil for the last 5-10 minutes.
Take everything out and serve on a nice platter with the soft corn tortillas kept warm on the side.
Squeeze the remaining lime juice and garnish with fresh cilantro.
Serve with your favourite toppings and enjoy!
