Trick of the Trade

It’s important to not completely cover the pot while wilting greens to help retain a bright green colour.

Another important step for helping to retain it’s bright green colour, is to immerse your wilted greens immediately after in ice cold water. Drain, and using your hands, squeeze out the excess water before tossing into the blender.

Just prepare the ice cold water right before the spinach is tender and bright green. Aprox 1 minute after putting the spinach in the pot.

Then simply transfer the wilted spinach and garlic into your favourite blender or processer and blend until smooth.

Like it Smoother

If you like it smoother, just add a little filtered water gradually until you reach the consistency you like.

Equipment

  • Medium Stainless Steel pot
  • Blender
  • Measuring cups
  • Garlic press
  • Small glass mixing bowl
  • Large glass mixing bowl

Ingredients
  

  • 1 lb Spinach cleaned and de-stemmed
  • 1 clove Garlic whole
  • sea salt and pepper to taste

Ice water bath

  • Ice cold water large bowl

Instructions
 

  • Cook 1 lb of fresh spinach that has been cleaned and de-stemmed without added water in a pot slightly covered for just a few minutes until tender and bright green.
  • While spinach is wilting prepare a large bowl with ice cold water.
  • Once spinach tender and bright green strain immediately immerse it in the ice cold water. This helps it retain it's green colour.
  • Drain well and squeeze the spinach with your hands to remove the excess water.
  • Transfer to a blender or processor.
  • Puree until very smooth and transfer in a small bowl. May add a little cold filtered water while blending if needed.
  • Season with 1 clove of minced fresh garlic, sea salt and black pepper to taste. You can add a little more water to get desired consistency.

Notes

Serve over baked potato, fish, on cold rice pasta, or on steamed vegetables.
