These Roasted Garlic Baby Potatoes come out nice and golden on the outside and fluffy on the inside.
I like to use red potatoes for this reason and they provide a nice earthy flavour and red contrast to a meal.
You could easily add use any fresh herbs, like Thyme. So feel comfy using whatever you have on hand and make this your own way.
Give it the old taste test and add more seasoning if needed.
I like to smash up the roasted garlic cloves and add a little extra virgin olive oil to a it and then drizzle it on top before serving it.

Garlic Roasted Baby Potatoes
These potatoes come out perfectly roasted! And for more flavour, smash the roasted garlic and toss with parsley just before serving.
Ingredients
- 18 Red Baby Potatoes washed, scrubbed,
- 2 tbsp Avocado oil
- ¼ tsp Paprika
- 6 Garlic cloves peeled
- 1 tbsp Fresh rosemary washed, chopped
- 1 tsp Sea Salt
- ¼ tsp Black pepper freshly ground
- 2 tbsp Fresh parsley washed, chopped and for garnish
Instructions
- Preheat over to 400 degrees.
- Add potatoes in a single layer in a roasting pan that’s lightly coated with avocado oil.
- Mix herbs, garlic, seasoning and oil in a bowl. Pour over the potatoes and coat well.
- Spread the potatoes out a bit so they are not touching each other. This will help with getting them that nice golden brown colour on the outside while keeping them fluffy inside.
- Roast in the oven for about 45 minutes or until tender and browned. Turn potatoes half way.
- Remove from the oven and serve on a nice platter.
- Garnish with parsley.
Notes
Option for steaming instead of roasting.
Steam the potatoes until they are easily pierced with a fork. Transfer potatoes to plate, remove steamer part & empty water from the pot, toss in seasonings and mix, add back in the potatoes and cover with a lid to keep warm until ready to serve. Tip: If you have arthritis and it’s acting up try sweet potatoes and season with sea salt, garlic, and rosemary
