If you are looking for a smoothie that will actually hold you over until lunch time (and are a coconut fan), then this Coconut Lime Smoothie is for you.
It contains a good dose of concentrated energy from healthy fats that will fuel you for hours. It also contains 30 grams of protein and 12 grams of fibre to make it a complete meal that you can just grab-and-go if on the run.
And it’s super Yum Yum Yum!
I prefer to use a little of a good quality BPA-free canned coconut milk brand like Natives Forest. Then I just dilute it with filtered water and love that I don’t need to do any soaking or straining. This works so well when I don’t have time to make my own. Plus you don’t need a lot since it’s concentrated in good fats. So diluting is definitely a good way to go. Not to mention it’s cheaper too!
I find commercially made coconut milks found in the fridge or in the tetra pak to be overly processed and contain carrageenan. Which is a natural ingredient made from red seaweed that makes a good thickening agent by manufactures.
The research on carrageenan is very controversy and I will not do a deep dive into that here. But what I will share here are the possible—and again I stress possible—side effects they found running tests on animals.
Possible side effects of Carrageenan
- Inflammation
- Bloating
- IBS or IBD
- Glucose Intolerance
- Colon Cancer
- Food Allergies
Some have found digestive relief from avoiding carrageenan including clients of mine over the years, but at this time we just don’t know the whole story. What we do know for sure, though, is that degraded carrageenan is toxic.
Where the plot thickens is some scientists feel natural carrageenan may degrade and change when coming into contact with stomach acid which could be why some have digestive issues with it.
Until then, listen to your gut, it always knows best!!
Enjoy this simple Coconut Lime Smoothie!
